The history of the Casato Bertoni Vinegar dates back to 1936 when Novello Bertoni began perfecting his craft. This tradition was inherited by his son, Lelio, who with intuition and determination founded a company dedicated to the flavour of this "Noble Diamond of Emilia". The Acetaia Bertoni makes traditional PGO (Protected designation of origin) and PGI (Protected geographic indication) Balsamic Vinegar of Modena, and with its family Reserves which have been aged especially for the most demanding palates. These products are marketed in Italy, Europe, America, Canada, Japan, China and the Arab Emirates, and can be found in winehouses and specialized retailers of Made in Italy products.
